  1. Cut potatoes into ¼ inch slices. Set aside.
  2. Chop the bacon into one inch pieces and brown in a large oven-safe skillet over medium heat. (I use my cast iron pan.)
  3. Remove the bacon to a bowl and brown the ground beef. Drain and add the bacon back in.
  4. Add onion and cook for 3-4 minutes or until the onion is softened.
  5. Add the Worcestershire sauce and seasonings and stir to mix.
  6. Push the meat mixture to one side of the skillet and layer potatoes on the bottom of the skillet. Move meat to cover the potatoes and layer the slices on the opposite side so the entire bottom of the pan is covered.
  7. Layer remaining potatoes on the top of the meat.
  8. Pour milk over the skillet, then add cheese over the top of the potatoes.
  9. Bake in the oven for 25 minutes. Tent the top with foil and bake an additional 10 minutes or until cheese is golden and potatoes are fork tender.

Tips for best results

  • If you use very lean ground beef you may not need to drain the skillet of excess grease before adding the onion.
  • Be sure to use a large skillet so you have room for everything!
  • Slice the russet potatoes thinly so they cook through. Thicker slices may need to bake longer. You do not need to peel the potatoes.
  • You can make this as a hamburger and potato casserole as well by cooking the meat on the stovetop, then transferring everything to the casserole dish starting with a layer of potato slices, then meat mixture, etc.
